Pamaco, Garrimar (52% dark noble)

pamaco_garrimar.gifPamaco, an upstart chocolatier from Unterägeri (canton Zug), is a bit of a mystery and even a Google search reveals precious little about this company. However, the company is clearly making inroads in the dark chocolate market. Pamaco's line of dark chocolates range from 51% to a maximum of 72% cocoa solids, placing its products squarely in the bittersweet category.

Pamaco Garrimar combines cocoa from Venezuela, Eduador, and Ghana in a long 72 hour refining process. The Garrimar is sumptuous and engaging, but it is also extremely sweet and buttery, with strong honey, raisins, and vanilla flavorings. In other words, it is the kind of chocolate which goes perfectly with a dark tea or an espresso. Only those with a real fondness for sweet stuff would manage to finish a whole Garrimar bar in one sitting.
