Pamaco, Indojaco (64% cacao)

pamaco_indojaco_large.gifUnlike the cosmopolitan Garrimar which features cocao beans from three different countries, Pamaco's Indojaco is downright provincial. Indojaco features Criollo beans sourced entirely from the island of Java, Indonesia. Lack of diversity is not necessarily a negative in the chocolate world, especially since Javanese Criollo beans turn out to be surprisingly multi-faceted.

Indojaco has a light red hue, a characteristic of Criollo beans, and a distinct coffee taste, which is probably no surprise for a chocolate originating from the caffinated paradise of Java. The roasted coffee flavor is dominant, but the chocolate has more to offer the taste buds with hints of perfumed flowers, tropical fruits, and sweet sugarcane. Nonetheless, these are secondary flavors and, for better or for worse, it is hard to get away from the inherent coffee base of the chocolate.
