Teuscher, Chocolate 77 (77% cocao)
Teuscher is a small, family-run chocolatier from Zürich that has achieved a remarkable degree of worldwide fame for its chocolate pralines and truffles. From sandy Dubai to glitzy Beverly Hills, chocolate critics and customers seem particularly enamoured by the company's Dom Perignon filled pralines and hand-dipped fruit truffles. At one dealer in the Philippines you can get a box of Teuscher chocolates if you buy a BMW. (or is it the other way around, a BMW with a purchase of Teuscher chocolates?) Needless to say, Teuscher chocolates are considered rare and precious commodities, so it was especially interesting to come across a line of pure dark chocolate bars for the famous chocolatier.
Chocolate 77 -- which not surprisingly contains 77% cocao solids -- is a surprisingly dry and bitter chocolate. The lack of sweetness can be extraordinarly off-putting, which is unfortunate, since the chocolate has a fine melt and nice vanilla flavors. The sweet-tooth will probably despise this chocolate, while those without a predisposition for sugar will find some charm, perhaps even a taste of bliss, in the raw cocoa taste.
